This simple yet impressive dessert celebrates seasonal fruit with a nourishing twist. Gently poached peaches are served with creamy honey olive oil labneh and a crunchy homemade oat, almond and pepita crumble for added fibre and healthy fats

Naturally sweetened and balanced with protein-rich yoghurt and wholefood ingredients, this recipe is a beautiful example of how desserts can be both satisfying and nutrient-dense.

Ingredients:

Honey Olive Oil Labneh

  • 400g thick Greek-style yoghurt

  • 1½ tablespoon extra virgin olive oil

  • 1 tablespoon honey (plus extra to drizzle)

  • Finely grated lemon zest, to taste

Poached Peaches

  • 4 ripe but firm peaches

  • 500mL water

  • 2 tablespoons honey

  • 1 strip lemon peel

  • 1 small cinnamon stick

  • 1 teaspoon vanilla extract

Healthy Homemade Crumble

  • ⅓ cup rolled oats

  • ¼ cup almonds, roughly chopped

  • 1 tablespoon pepita seeds

  • 1½ tablespoon extra virgin olive oil

  • 1 tablespoon honey or maple syrup

  • Pinch of sea salt


Method

  1. Line a sieve with clean chux cloth and set it over a bowl.

  2. Spoon in the yoghurt, stir through the olive oil, honey and lemon zest, and fold the cloth over. Refrigerate whilst making the other recipe elements and take out when it’s time to serve, (recommend 60minutes+ to set).

  3. In a medium saucepan, bring the water, honey, lemon peel, cinnamon and vanilla to a gentle simmer.

  4. Cut a small cross in the base of each peach and gently lower them into the liquid. Simmer for 10–15 minutes, turning occasionally, until tender but still holding their shape.

  5. Remove peaches and allow to cool slightly, then peel off skins (they should slip off easily).

  6. Simmer the poaching liquid for another 5–10 minutes to reduce slightly. Set aside.

  7. In a large mixing bowl, combine oats, almonds, pepita seeds, olive oil, honey and salt together.

  8. Heat olive oil in a large frying pan and add in crumble mixture to toast on medium heat until golden and fragrant. Set aside to cool.

  9. Serve by spooning labneh into a bowl. Smear with the back of your spoon then top with poached peaches, and poaching syrup. Sprinkle with crumble and enjoy!
