Choc-Peanut Butter Dates

These Choc-Peanut Butter Dates offer a portion-controlled sweet option using wholefood ingredients. Combining natural sweetness with healthy fats helps moderate blood sugar response compared to traditional confectionery.

Makes 12 dates


Ingredients

  • 12 Medjool dates, pitted

  • 6 teaspoons smooth peanut butter

  • 1 cup dark chocolate melts

  • flakey sea salt, for garnish


Method

  1. Slice the top of each date enough so that you can stuff it, but not all the way through the entire date. Fill each date with ½ teaspoon of peanut butter. Gently push the sides of the dates together to secure.

  2. Freeze the filled dates for 10-15 minutes.

  3. Meanwhile, melt the chocolate; transfer chocolate melts to a microwave-safe bowl. Microwave in 30-second increments and stir in between, until completely melted.

  4. Line a baking tray with baking paper. Dip each date into the chocolate to coat. Transfer to the tray. Sprinkle with flakey sea salt.

  5. Chill the dates in the fridge for 30 minutes or until the chocolate is set.
