Chicken Bahn Mi Wonton Cups

These Chicken Bahn Mi Wonton Cups offer a fresh twist on a classic Vietnamese flavour profile. Packed with lean chicken and crunchy vegetables, they’re ideal as a light meal or entertaining option that supports balanced nutrition without excess refined carbohydrates.

Makes 12 wonton cups


Ingredients

  • 12 wonton wrappers

  • 1/3 cups mayonnaise

  • 2 tablespoons soy sauce

  • 1/2 lime, juiced

  • 1 large chicken breast, cooked and shredded

  • 1 large carrot, grated

  • 1 Lebanese cucumber, diced

  • 2 spring onions, thinly sliced

  • 1 long red chilli, sliced

  • 1/3 cup coriander leaves


Method

  1. Preheat oven to 180 degree celsius and spray a 12-hole muffin tin with cooking spray oil.

  2. Gently press wonton wrappers into muffin holes, spray with cooking spray oil and bake for 10-12 minutes or under golden and crispy.

  3. Combine all sauce ingredients in a large bowl and whisk until all coated. Place all remaining ingredients in sauce bowl and stir to combine.

  4. Fill wonton cups with Bahn mi filling and squeeze over extra lime. Enjoy!
