Choc-Dipped Apple Sandwiches

Ingredients

  • 2 large red apples, cut into 1cm thick slices and core removed

  • 2/3 cup dates, pitted

  • 1/2 cup tahini or 100% natural peanut butter

  • 3 teaspoons chia seeds (optional)

  • 1 cup dark chocolate chips or 1 block 70% dark chocolate, melted

  • Sea salt flakes, for garnish


Method

  1. In a blender or food processor, blend the dates, peanut butter, and a dash of warm water until a smooth consistency is achieved. Stir through chia seeds.

  2. Spread 1 tablespoon of the peanut date spread on one apple slice and top with another apple slice to create a sandwich. Cently press the apple slices together to hold in place. Repeat until all apple slices are used.

  3. Melt the chocolate by transferring the dark chocolate to a microwave-safe bowl. Microwave in 30-second increments and stir in between, until completely melted.

  4. Line a baking tray with baking paper. Dip each apple sandwich into the chocolate to coat. Transfer to the tray.

  5. Sprinkle with flakey sea salt.

  6. Chill the coated apple sandwiches in the freezer for 30 minutes or until the chocolate is set. Enjoy!
