Greek Chicken Gyros
Serves 4
Ingredients
Chicken marinade:
500g chicken breast, diced
2 tablespoons greek yoghurt
1 teaspoon red wine vinegar
Zest of 1 lemon
1 teaspoon each oregano/cumin
1 teaspoon olive oil
Salt & pepper to taste
Tzatziki:
1/2 cup greek yoghurt
1/2 Lebanese cucumber, grated, excess water squeezed
1 garlic clove, minced
1/2 teaspoon salt
Wrap:
4 wholemeal pita bread
1/2 iceberg lettuce, chopped
2 roma tomatoes, finely sliced
1/2 red onion, finely sliced
Method
In a large bowl, combine all chicken marinade ingredients with the chicken. Set aside for 10 minutes.
Meanwhile, prepare tzatziki by combining all ingredients in a small bowl and mixing to combine. Season to taste.
Heat 1 tablespoon olive oil in a medium pan over medium-high heat. Cook chicken, in batches, for 5-10 minutes or until browned. Remove from heat and set aside.
Assemble gyros by adding 1 tablespoon tzatziki, 1/2 cup chicken and salad to a wholemeal pita bread. Optional to toast in a sandwich press or eat fresh,
